Easy Christmas Morning Breakfast Quiche Recipes

When your bestie asks you to make quiche, but you’ve never made one before…first, you panic slightly, then you find a way to make it! What I did know was that I was up for the challenge but there was no way I was going to have time to make pie crust from scratch with the craziness of the days leading up to the holidays.

It turns out that making quiche is easy! The boys even helped to measure, crack the eggs and saute the veggies so we could spend time cooking together. While I was nervous to make that first cut, both kinds of quiche were a hit at the party! I realized that since both boys really loved the bacon and cheese one, I’m going to make two, bring one to my parent’s house for Boxing Day morning breakfast and freeze one for us to have in January!

Here are the easiest ways to cook a “make-ahead” quick and delicious Christmas morning breakfast with bacon and cheese and a veggie quiche! Make a double batch (the pie crusts come in twos) and freeze the second one for an simple brunch with guests!

Bacon and Cheese Quiche

1/2 cup half and half cream
1/2 cup milk
5 eggs, slightly beaten
1/4 teaspoon pepper and salt
3 tablespoons of real bacon crumbled or real bacon bits
1 cup shredded cheese (I like sharp or old cheddar)
1/4 cup grated Parmesan cheese
Tenderflake pie crust (do not use the deep dish)
(you could easily make mini tarts for your guests as well!)

Directions

1. Beat the eggs, cream and milk and set aside.

2. Fill the bottom of the Tenderflake pie crust with shredded cheese, Parmesan and bacon crumble.

3. Pour the egg and milk mixture on top.

4. Place the quiche on a baking sheet and bake at 350 for about 45 minutes.

This quiche can be made a day or two ahead and put in the fridge then reheated for a fast Christmas morning breakfast!

Mushroom, Vegetable and Cheese Quiche

1 1/2 cups of shredded Cheddar cheese
1 cup mushrooms cut into bitesize pieces
1 cup cut up red peppers, onion and other vegetables of your choice (fill 1 cup)
5 eggs
1/2 cup milk
1/4 teaspoon each of salt and pepper
1/2 cup half and half cream
1 Tenderflake pie crust (do not use the deep dish)

Directions

1. Saute the mushrooms, onion, red pepper and other vegetables on low heat with a small bit of oil.

2. Mix eggs, milk and cream together and set aside.

3. Prepare the quiche by layering all vegetables on the bottom, top with the shredded cheese.

4. Add in the milk and egg mixture.

5. Place quiche on a baking sheet and bake at 350 for about 45 minutes.

This quiche can be made a day or two ahead and warmed up or even frozen to reheat for an easy holiday breakfast or brunch!
