Pumpkin Pie and Butter Tart Cheats

Thanksgiving is this weekend and we can’t wait to spend it with family up at my parent’s house at the lake. There is nothing like watching the leaves up in the country to really set the scene for this holiday.

Like most years, it will be my responsibility to bring a dessert that we all love and pumpkin pie and butter tarts are our family favourites! There is a lovely little pie shop, right in town, but this year I wanted to bake them from scratch! I had very limited time leading up to this long weekend, so I needed some baking cheats to make this happen. I searched for some recipes online but ultimately made them work for the ingredients that I had on hand. Using Tenderflake pie and tart shells saved me TONS of time and allowed me to even watch the baseball playoffs!

Pumpkin Pie with Decorations (challenging myself!)

2 Tenderflake shells (no pastry making, easy cheat!)

2 cups canned pure pumpkin

1 egg plus 2 yolks

1/2 cup half and half cream

1/4 cup melted butter

1 tsp vanilla extract

1/2 cup brown sugar

1/2 cup sugar

1 3/4 tsp pumpkin spice (cinnamon, nutmeg, ginger mix)

1 can whipped cream

Steps:

1. Preheat oven to 450.

2. Allow shells to defrost at room temperature.

3. Remove one shell from foil and cut small leaf shapes or use cookie cutters to cut a few decorations for the top of the pie. Put them on a parchment paper-lined cookie sheet and set aside.

4. Whisk eggs and yolks then mix in all other ingredients and stir will so there are no lumps.

5. Pour the mixture into the pie shell.

6. Bake the pie for 10 minutes at 450, then reduce the temperature to 350 and bake pie for another 40-45 minutes.

7. Remove the pie when a wooden skewer comes out clean and put the unbaked pastry decorations in the oven at 350 for about 10 minutes. Watch them closely (I had to make them twice, but in all fairness, I was watching the Blue Jay game).

8. Remove the shapes from the oven and let them cool. When cooled, top your pie with them in any way you like! Get the kids to help too!

Quick and Easy Butter Tarts

Tenderflake mini tart shells (that’s the cheat!)

1 egg

1/3 cup melted butter

1 cup brown sugar

1 tsp vanilla extract

2 tablespoons half and half cream

1/2 cup raisins (optional)

Steps:

1. Prehead the oven to 375.

2. Melt the butter and then add in all other ingredients. Mix well until there are no lumps. Add in raisins, if you are using them (my kids said NO WAY)

3. Place frozen tart shells on a baking sheet and fill them 3/4 of the way with the mixture.

4. Bake for 15-18 minutes at 375.

5. Remove from the oven and let them cool.

6. Fight your husband and kids away from them so that you can take them to Thanksiving dinner!

    See now, I would have put raisins in them just so the kids do stay away. My go-to favourite is apple crisp. In fact, I have one in the oven for dessert/breakfast right now.
