Four Delicious Low Carb and Gluten-Free Lettuce Wrap Ideas

It’s official! I’ve fallen in love with lettuce wraps! I’ve eaten gluten-free and low carb for over a year and a half now and I’ve never tried to add crunch to my meals in this delicious, healthy and simple way! The last few weeks of warm weather has brought out some new, simple ideas for dinners and they are a huge hit around our house!

1. Szechwan Chicken and Veggie Lettuce Wrap: This is one of the meals that I regularly order in restaurants, but never tried to make at home until last week! This is our new family fave and it’s so easy to make!

  1. Stir-fry chicken breasts or thighs in PC Memories Of Szechwan (available in Blue Menu, lower fat, with Stevia).
  2. Add a bag of broccoli slaw or your favourite finely cut veggies.
  3. Scoop into romaine lettuce leaves and crunch away!
  4. Make some rice for the kids, if this is too fancy for them!

lettuce_wrap_ideas2. Tuna Lettuce Wrap: Man, do I ever miss bagels! The other day, I was about to make a salad with tuna on top and got creative instead! I put my tuna into lettuce wraps and loved the new crunch! Tip: Best enjoyed in the sunny backyard!

lettuce_wrap_ideas3. Lettuce Wrap Burgers: In the summer, we eat burgers at least once a week. Whether it’s a turkey, beef or veggie burger, if you want to keep to low carb and gluten-free, try wrapping it with lettuce leaves! Iceberg works well because the leaves are large enough for a yummy burger patty!

lettuce_wrap_ideas4. Taco Tuesday Lettuce Wrap: Skip the corn tortilla wrap or shell and scoop your turkey or beef taco meat into a romaine lettuce leaf! Top with salsa, cheese, sour cream and guacamole!
